The story is set almost entirely in a Saigon house where a 10-year-old orphan girl named Mui arrives to work as a servant. As she grows into a beautiful young woman, Mui is quietly and carefully observant of everything around her, from the scent of green papaya (hence the title) to the relationship between her employers. The film takes its visual cues from Mui's observations--it's a placid, soothing film that lingers over the physical and emotional details of its setting and story. What's really astonishing about this beautiful film is that director Anh Tran Hung shot it entirely on a soundstage in Paris, but the sights and sounds are so completely convincing that you'd swear the setting is an actual home in Saigon. This remarkable craftsmanship remains invisible to the viewer, and the seductive progression of the story unfolds with exacting visual precision. It's a film about Mui's growth and development, but also about her benevolent effect on the world around her. As such, it's a movie to savor like no other, life affirming and glorious in the memorable depth of its captivating simplicity. --Jeff Shannon

Based on the book by Lt. Col. Harold Moore (ret.) and journalist Joseph Galloway, We Were Soldiers offers a dignified reminder that the Vietnam War yielded its own crop of American heroes. Departing from Hollywood's typically cynical treatment of the war, writer-director Randall Wallace focuses on the first engagement of American soldiers with the North Vietnamese enemy in November 1965. Moore (played with colorful nuance by Mel Gibson) and nearly 400 inexperienced troopers from the U.S. Air Cavalry were surrounded by 2,000 North Vietnamese Army soldiers, and the film re-creates this brutal firefight with graphic authenticity, while telling the parallel story of grieving army wives back home. While UPI reporter Galloway (Barry Pepper) risks his life to chronicle the battle, Wallace offers a balanced (though somewhat fictionalized) perspective while eliciting laudable performances from an excellent cast. Like the best World War II dramas of the 1940s, We Were Soldiers pays tribute to brave men while avoiding the pitfalls of propaganda. --Jeff Shannon

Let's face facts here: You don't watch a movie like Major Payne for its artistic merit any more than you'd watch Schindler's List for its comedy. If you go in thinking otherwise, you're bucking for a disappointment. So it's a pleasant surprise to discover that Major Payne is more entertaining than a barrel full of bad reviews would lead you to believe. It's a totally formulaic comedy about a bunch of misfit kids who turn into a crack squad of skillfully disciplined ROTC cadets, but Damon Wayans is spot-on hilarious in the title role as the hardened military bulldog who whips the little slackers into shape. Wayans plays the role as if killing and warfare were the only joys in life, and when he finds himself cast adrift without a military commission, a scene that directly parodies Apocalypse Now lets you know that Wayans (who cowrote the script) is going to bring something new to this routine scenario. Major Payne's idea of a good bedtime story is to recall his worst battlefield horrors, and Wayans gives it just the right twist of comedy to put Payne's bullet-pierced heart in the right place--he's really just a good guy with an iron-clad exterior. The young recruits strut their stuff in the final round of their cadet competition (their marching rap is good for a solid laugh), and director Nick Castle keeps it all from becoming too stupid or over the top. It's arguably only for Wayans's most ardent fans, but as a send-up of all the great movie drill instructors, Major Payne is painlessly enjoyable. --Jeff Shannon

Preparing delicious Vietnamese coffee is quick, easy and doesn't require much clean-up afterward. The coffee filter is stainless steel and there are three parts (filter, screw-on damper, and lid). Simply place the filter on top of a cup, so it looks like a hat. Add 2-3 teaspoons of coffee to the filter, then screw on the damper so it's snug (not tight). Shake the filter a bit to settle the coffee. Fill up the cup about 1/3 with hot water then wait 20 seconds. Unscrew the damper 2 turns and fill the cup entirely with hot water. Place the lid on and wait a few minutes until the water has dripped though. Add a spoonful (or more) of sweetened condensed milk to the cup before or after you start the process. The final result is fabulous. Printed instructions come with the filter. The filter set is made in Taiwan of stainless steel, and quality is excellent--it will last for years.
